Without water
Appearance: Bright pale gold. Viscous beads gather quickly before forming slow, confident legs, reflecting both the youthful spirit and the mid-to-high ABV.
Nose: Fresh, vibrant and fruit-led. Red berries — raspberry, cherry and tart damson — rise first from the Port barrique influence, supported by orchard fruits, sweet malt and a touch of vanilla from the bourbon cask. Beneath the brightness sits a gentle Highland character: soft cereal notes, light spice and a hint of oak. With time, a subtle herbal edge and a trace of cocoa emerge.
Palate: The initial burst combines red fruits with citrus brightness, followed by sweet barley and light vanilla from the bourbon maturation. The Port finish contributes depth and colour: berry compote, gentle tannins and a soft red-wine warmth.
Finish: Medium-long, warming and fruit-forward. Red-berry notes linger alongside a touch of oak spice and drying malt.
With water
Appearance: The colour softens slightly to a delicate rosé-gold, retaining clarity while appearing fresher and lighter in tone. Legs remain defined but move more quickly.
Nose: Water brightens and separates the aromatics. Fresh berry notes lift — strawberry, raspberry and redcurrant — while citrus and pear re-emerge. The malt becomes cleaner and more pronounced, and the Port influence softens into gentle fruit sweetness. A faint floral note appears as the dram opens.
Palate: Smoother, sweeter and more open. Orchard fruits become fresher and more immediate, while the red-berry richness softens into a gentle, rounded sweetness. Malt and honey come forward, with the Port influence becoming delicate rather than dominant. The texture becomes lighter and more playful, highlighting the spirit’s youthfulness.
Finish: Medium, clean and softly warming. Fresh berries and light oak linger briefly before fading into sweet malt. A softer, more elegant close than the neat pour.
Overall Impression
It brings together bourbon clarity and Port-led fruit richness with distinctive Highland character. Neat, it is lively, berry-driven and energetic, with bright fruit and clean structure. With water, it opens beautifully — fresher, sweeter and more approachable — revealing a balanced marriage of red fruits, citrus brightness and gentle malt.
