Tasting Notes
Without water
Appearance: A yellow amber colour with golden highlights
Nose: Rich fruity tones with accents of sweet, stewed orchard fruits- baked apple and pear compote layered over burnt toffee and a touch of struck match. A reminder of childhood pineapple cube sweets.
Palate: The mouthfeel is full-bodied and pleasantly oily. Initial sharp and zingy sweetness leads to honeyed malt and butterscotch then gives way to tropical fruit and charred oak. There is a balance of spice- nutmeg, ginger and a tang of lemon zest.
Finish: A supremely elegant and long finish which is long and warming. Lingering notes of roasted nuts and dark caramel, with a light mineral smokiness trailing off slowly.

Appearance: Paler amber which still retain the golden highlights
Nose: The water really opens up the sweetness and releases aromas of pear drops, giving way to heather honey and apricot jam.
Palate: A creamier and rounder taste unfolds and the spice retreats revealing more orchard fruits - peaches, baked banana and poached pear. There is a delicate trace of sweet cereal and malt.
Finish: Softer but still long with a hint of honeycomb and a touch of final ginger.
