Types of Whisky Casks

  • Ex-bourbon barrels: These are by far the most widely used in Scotch whisky maturation. They’re made from American oak and usually impart flavours of vanilla, coconut, and gentle spice.
  • Sherry casks: Typically made from European oak and seasoned with sherry in Spain, these casks can give whisky deep colour and notes of dried fruit, nuts, and spice.
  • Wine and fortified wine casks: Port, Madeira, Marsala and red wine casks are increasingly popular, adding layers of dark fruit, tannin, and richness.
  • Ex-peated casks: Sometimes a cask that once held a smoky Islay whisky is used to mature a new spirit, lending it a whisper of peat without overpowering the core character.

Cask size also matters. Hogsheads (approx. 250L) and butts (approx. 500L) are typical in Scotland, while smaller casks such as octaves (approx. 50L) can accelerate maturation and lead to more intense wood influence in a shorter time.
