Tomatin 30 Year Old Tasting Notes
Without water
Appearance: Soft burnished gold with a gentle orchard-gold brightness, capturing the calm maturity of long Highland ageing. The whisky moves slowly and gracefully in the glass, forming long, unhurried legs that suggest depth, concentration and a supple texture.
Nose: Refined, unmissable sherry characteristics. Ripe orchard fruits — baked apple, pear compote and apricot — supported by honeycomb and creamy vanilla custard. Subtle floral notes and hints of leather-bound books create quiet sophistication. With time, dried citrus peel, toasted nuts and warm spice emerge.
Palate: Silky, layered and elegantly composed. Stewed apple, soft stone fruits and poached pear unfold across a rich, seamless texture, complemented by mellow oak and gentle spice. Vanilla cream, toasted cereals and delicate nuttiness develop with each sip.
Finish: Long, warm and harmonious. Polished oak, soft spice and a final whisper of orchard fruit linger in a serene, mature fade.
With water
Appearance: The colour softens slightly to a pale orchard-gold, retaining clarity and slow, graceful legs while appearing marginally lighter in tone.
Nose: Water lifts the aromatics, bringing out fresh apple, pear skins and citrus zest. Honey, barley sweetness and gentle florals show more clearly, while the oak influence becomes more delicate and refined.
Palate: Smoother, brighter and more fruit-forward. The fresh orchard character becomes more vibrant, with citrus lift and softened oak. Malt sweetness and a lighter, airy structure come forward as the texture opens.
Finish: Medium-long, soft and delicate. Fresh fruit and subtle oak remain with a gentle warmth, offering a more graceful close than the neat version.
Overall impression
A beautifully poised 30-year-old Tomatin, showing both depth and elegance. Neat, it is rich, layered and quietly complex with a long, warm finish. With water, it reveals a fresher, brighter Highland character with enhanced fruit and softened oak.

About The Dryad
In the shadowed forests of the Highlands, where ancient oaks have stood for centuries, there are whispers of spirits older than memory. Within the heartwood of a great tree dwells the Dryad, a guardian of the woodland, quiet, watchful, and bound to the living oak that shelters it. Beautiful yet reserved, the Dryad carries the strength of the forest itself, its power rooted deep in Celtic myth and shaped by the passing of ages.
This whisky reflects that same sense of hidden depth and enduring character. Matured in oak and guided by time, it reveals layers of richness, warmth, and quiet complexity. Like the Dryad, it is shaped by nature, touched by mystery, and carries with it the timeless spirit of Scotland.
About The Distillery
Tomatin Distillery, founded in 1897 in the Highlands south of Inverness, has evolved from a small local operation into one of Scotland’s most respected malt whisky producers. Known for its gentle, fruity style, Tomatin uses long fermentation, tall stills, and carefully selected bourbon and sherry casks to create its signature smoothness and sweetness. Once the largest malt distillery in Scotland, it has since refocused on craftsmanship and high-quality single malts. Today, Tomatin is admired for its warm, approachable character and its enduring connection to the distillery community that grew around it.
